Enthusiastic and ambitious, Álvaro Carrillo Conesa has landed at Tágara, one of our incredible Abama restaurants, with a clear objective: to make it the most modern establishment in Tenerife without renouncing local culinary traditions. A native of Cartagena, Murcia, this young chef has already spent 10 of his 27 years in the world of gastronomy, with a major part of that time in Martín Berasategui’s restaurant in Mallorca.
How did you end up at Tágara?
I was working at one of Martín Berasategui’s restaurants in Mallorca, and I was offered the opportunity to come to Tenerife and be the head chef of Tágara. I accepted the challenge because I’m an ambitious person and I had already lived in Tenerife and knew I like the climate, the food, and the people. The fact that this is a Canary Islands restaurant made me like it even more. I think it’s an interesting project in terms of cuisine and culture.
What culinary philosophy do you bring to Tágara and the Abama restaurants in general?
It’s important to me that people think of Tágara as a quality restaurant that works with local products, and above all, fresh fish. I want it to be associated with Canary Islands tradition and flavors, but with a modern twist.
Would you define Tágara as a modern restaurant with classic recipes?
Yes. We develop new creations that respect tradition and local ingredients. We inspire ourselves with the cultural heritage of the Canary Islands and bring a modern touch.
Which local products do you like the most?
I have a total weakness for fresh fish, and since we’re located right on the Atlantic, I want to offer our guests a variety of choices. I’d like it if, when people want to try a great local fish, the first place that pops into their head is Tágara.
What do you think of the dining offer at Abama Resort?
For me, Abama is a symbol of quality. Any person you ask will tell you it's the best the island has to offer.
What do you like the best about Tágara?
It's hard to just pick one thing. I like the ambiance, the climate, the location, the team. What sticks with me the most is the feedback from our guests, who appreciate the service and the quality of the food.
What will we find on the new menu?
The new menu will be ready at the beginning of 2025 and will be completely different from the previous one. Right now we offer one fish dish, but the new menu will have four, including red bream, moray, and redbanded seabream. I’m very happy with the experiments we’re doing right now. I can announce that we'll have an almond coulant with coffee, accompanied by a Canary Island rosquetes ice cream inspired by a very traditional snack.
